Sofitel Moorea Ia Ora celebrates its Polynesian history every Thursday night beginning at 5pm, with a unique Polynesian feast at the Pure Restaurant. Guests participate in a Tahitian cultural master class learning how to make the famous 'poisson cru' (like ceviche), the origin of the coconut and its purposes, how to weave baskets and hats, how to wear a pareo and dance the Ori' Tahiti. As the sun sets, a mysterious ceremony begins with the fire dancers leading the guests to the 'fare utu utu' (open air kitchen) where they watch the opening of the ahima'a (oven in the ground) and the blessing of the ma'a Tahiti (food). Later in the evening, guests can enjoy the ma'a at the Pure restaurant surrounded by the ancient rhythms and percussions from the grand Polynesian dance show.

Two Michelin star and 5-star Diamond Chef, Guillaume Burlion creates weekly seasonal menus according to his inspirations at the resort's signature K Restaurant, showcasing the finest ingredients from around the world such as Ossetra caviar and d'Echiré French Butter.

Guests can indulge in a seven-course tasting menu (125.70€ per person) paired with wines or Champagnes chosen by Sofitel's own sommelier (Sofitel Moorea is one of only four hotels in Tahiti to have a sommelier) from a selection of over 250 references.

Chef Guillaume Burlion has enjoyed a distinguished career; nominated Escoffier Chef in 2000, and has worked at prestigious addresses including Maxims, Hôtel Crillon and the French Presidential Palace Elysée. He was Personal Chef for President Bill Clinton in 2000 and has been Executive Chef in 5-Diamond restaurants in the US including The Wild Boar (Nashville, Tennessee), Tide Restaurant (Mystic, Connecticut) and W Hotel in Waikiki.
