Following the incredible success of Manna from Devon Cooking School's wood fired oven cooking courses at their school in Kingswear, co-owner David Jones has been invited to host guest workshops at broadcaster Kate Humble's farm, Humble by Nature. The 'Cooking on a Wood Fired Oven' courses will take place at Kate's farm located near Monmouth in the beautiful Wye Valley on May 20th, June 10th and September 9th.
During the 'Cooking on a Wood Fired Oven' course, visitors will be taught how to make the very most of cooking using both the farm's brick Pompeii oven and their Esse Firestone oven. Using the freshest of ingredients, including meat reared on Kate's farm, students will learn how to make pizza dough, shape, top and bake pizzas they will also be taught how to roast, griddle, grill and bake. Sweet and savoury delights including a fish stew, stuffed peppers, roast chicken and vegetables and spiced apple empanadas as well as many other taste bud tingling dishes will be taught throughout the one day course. In addition to culinary techniques, David will also cover vital aspects such as siting the oven, wood selection, how to light and heat the fire as well as controlling and measuring temperatures. The one day courses cost £95 per person and run from 10:00am - 4:30pm, lunch and ingredients included.

David Jones has been teaching the art of wood fired cooking for the past seven years, and has been at the forefront of this trend. David and his wife Holly have co-authored 'Wood Fired Cooking', a recipe book bursting with dishes perfect for wood fired oven cooking.
Humble by Nature is a working farm owned by broadcaster Kate Humble and her husband Ludo Graham. The farm is home to a thriving rural skills centre reconnecting people to the land and teaching animal husbandry, smallholding, food, rural skills and crafts. Manna from Devon Cooking School and B&B was established in 2005 by David and Holly Jones. It is run from their beautiful South Devon Victorian home in Kingswear, overlooking the River Dart. Each class is made up of no more than eight people, allowing for maximum participation. When the course has finished, lunch is served, made up of all the food cooked by you and served with a chilled glass of local wine.

On David and Holly's trip around India in 2013 they picked up an array of recipes and styles of cooking from their travels to the states of Rajasthan and Kerala. They share these experiences, new found knowledge and flavours in their 'Inside North Indian Cooking' and 'Inside South Indian Cooking' courses. - Holly Jones studied at Leith's School of Food and Wine and is a chef with twenty years experience. She has written many articles and books, has appeared on UK television, trained chefs from many organisations, run cafés and restaurants and answered questions as resident chef on the BBC's Food website. Holly also served as an army officer for three years.
- David Jones served as an officer in the Royal Navy followed by a decade as a management consultant. Both careers took him all over the world, which is why he is now happy to have settled and re-trained as a baker and wood fired oven cooking expert.
