The Year of the Monkey falls on 8 February 2016. The monkey is the ninth animal sign of the Chinese zodiac which symbolizes intelligence, energy and versatility. The Year of The Monkey brings the hope of optimism and adventure – but it is also expected to be a fast ride.
Grand Hyatt Macau takes an innovative approach to traditional decorations, with colorful festive flowers and ornaments adorning every corner of the hotel to welcome the Year of the Monkey. A calligraphy master will create 'Fai Chun' lucky charms for guests at the Lobby Boutique, and the Fortune God will present gifts filled with blessings and prosperity for the year ahead. Lion and Dragon dances add excitement throughout the hotel on the first day of the Lunar New Year. Grand Hyatt Macau has also prepared several unique Spring Festival dining experiences, including an authentic Dongbei Regional Specialties – Pig Feast at Beijing Kitchen.

Beijing Kitchen Celebrates Lunar New Year with an Authentic Dongbei Regional Specialties – Pig Feast
For centuries, villagers in northern China's Dongbei region would sacrifice a pig after the eighth day of the twelfth lunar month in honor of the New Year to celebrate harvest and prosperity. The locals will prepare a huge meal to share with family and friends, cooking each part of the pig in the tastiest way. As well as being a grand and delicious feast, the whole pig symbolized plentiful luck and blessings in the year ahead.
To celebrate Spring Festival, Grand Hyatt Macau's Beijing Kitchen brings this time-honored tradition to Macau. Don't miss the unique opportunity to experience a truly authentic Chinese Spring Festival feast. Chef Sun Yinming, Chef de Cuisine of Beijing Kitchen, journeyed to Northeast regions, Shenyang and Dalian to explore and study the authentic ingredients and flavors of the Whole Pig Feast. He develops his recipes to perfection and exhibit the spectacular a la carte menu of appetizers, mains and dim sum to diners at Grand Hyatt Macau's Beijing Kitchen throughout February until mid-March.
According to northern Chinese tradition, different parts of the pig are used in an array of delicious dishes, such as Marinated pork trotter terrine, Poached pork liver andkidney in soy sauce and Braised pork ribs with potatoes, green beans and steamed bun. Mouthwatering mains include Braised pork cheek in soy sauce, Sautéed pig tails with fresh chili, and Dongbei style braised pork belly with vermicelli, black pudding and preserved vegetables.
Diners will experience the freshness of the deep springs of life ingredients, with genuine preparation that includes braising in a delicious double-boiled pork soup base to add richness without being oily. Several ingredients not found in southern China have been sourced from Dongbei, including dried long beans and certain types of preserved vegetables. Chef Sun has also crafted two homemade sauces – the Dongbei chili meat sauce and Signature egg paste – adding unique flavors to dishes like Assorted vegetables and Pan-fried sweet corn pancakes with pork knuckle and assorted condiments.
Beijing Kitchen invites families and friends to enjoy this unique Spring Festival reunion dinner between 7 February and 13 March. The seasonal tastes of northern China and the enduring deliciousness of pork in classic village dishes are refined for the discerning palate of today's diners.
